Almnäs registered the brand Wrangebäck on April 8 1889, making it Sweden’s oldest registered cheese brand. After a short break in production, in 2008 they were fortunate enough to enlist the help of a former dairyman to revive the manufacture of Wrangebäck cheese, using the original Almnäs recipe and method. They took the wooden planks from the old dairy and used them in the new storage facility. The original bacterial cultures that remain in the planks imbue the Wrangebäck rounds with an authentic historical note, preserving an unbroken chain of bacterial cultures dating at least 150 years. The surface is washed with salty water in the same traditional method used for Almnäs Brick. 

In classic Swedish literature, Wrangebäck is described as the archetype of the great Swedish Manor cheese. Its aroma is slightly tangy, calling to mind the grassy-milky scent of a warm cow barn. Wrangebäck has a wonderful, slightly tart, complex umami flavour, and the feel in the mouth is smooth, dense, and creamy. The maturation time is between 18 and 30 months.

Almnäs has been producing cheese consistently since the 1830s, except for a short break between 1961 and 2008. They have the oldest registered cheese brand in Sweden, “Wrangebäck Sweden,” registered in 1889. The cheesery is housed in the estate’s old distillery building, which was built in 1770. Over the years the building has been repurposed many times, for example to store grain and military supplies. In 1987 due to his father’s poor health, Thomas Berglund returned to the estate and decided to start making cheese again. After many years of planning, traveling to France and Switzerland to study cheesemaking, and gaining organic certification, he re-started production in 2008. Their top-of-the-line, modern manufacturing equipment comes from Switzerland. Made of copper to improve the structural and sensorial characteristics of the cheese.
