Prepared in four phases, these almond triangles are not an easy task to make but are extremely easy to grow fond of.

First, an all butter shortcrust pastry is made by the expert hands of Le Petit Duc's pastry chef. While the pastry base is in the oven, a mixture of almonds, honey and butter is cooked and reduced over a low heat in a copper bowl. It is then poured onto this pastry base to be united during a final passage in the oven. Finally, it takes experienced hands and a hot knife to cut the tray of delicacies into triangles.
