A limited-availability cheese due to it being the "grazing" version of Tuma Persa: it's produced solely from milk of animals which graze and feed exclusively on grass in the Castronovo area of Sicily. No other feed or supplements. As a result, the paste of this cheese is characteristically vibrant yellow, due to the high concentration of beta carotene in the fresh grass, the milk, and subsequently the cheese.

Soft, compact paste with a few holes. Balanced between sweet and tangy, but not salty, with an aftertaste reminiscent of blue cheese.

Try it with bodied and aged red wines, wildflower honey, spicy chutneys and quince or fresh figs.
