IT Provoletta / Scamorza white 420g (a whole) SOV

Italian cow's milk cheese, basically a matured mozzarella which has had extra time in a salt brine. It is light yellow in colour, with a mild yet tasty flavour. Smooth texture and cuts without crumbling. It is quite a verstaile cheese, mostly used on pizza but equally suitable for snacking, as an antipasto as well as cooking pasta sauces and risotto.
