Faithful to the tradition of this special pecorino, Busti never changed either its unique trapezoidal shape or the ancient recipe. In order to cater to wider audiences this variation is lactose free without loosing the traditional pecorino’s taste. The core is tender, sweet, slightly acid. The rind is treated with organic tomato paste that gives this cheese its characteristic red colour. The use of vegetable rennet makes it suitable for vegetarians.
