Blu del Gregge is the first blue cheese of Busti family, and it is produced with pure sheep milk. The addition of a selected noble mould (penicillium roqueforti) injected in the milk allows the typical marbling grow, which makes the inside of the cheese pearly white in colour with the characteristic blue-green veins, and a soft texture. It is a versatile Pecorino which is perfect for cooking. Its strong flavour gives a nice extra touch to starters, first courses, second courses and even desserts. Limited edition!
