Small-batch, artisanal Gorgonzola Piccante, matured for at least 120 days.
Gorgonzola is said to be invented by a cheesemaker in love who, in order to hurry to a date with his beloved, left the curd in the boiler by mistake for the whole night, then mixing it in the next morning's curd. The older curd being more acidic, did not mix perfectly with the morning curd, and so they turned out to be full of folds and air pockets, which during the aging enabled the development of mold inside the cheese. It was immediately considered a pleasant novelty and then replicated on purpose. In fact, in the production of Gorgonzola, the "double curd" processing method was followed for a long time, combining the evening curd with the morning one.
We love its robust penicillin notes over some Le Ciappe flat bread and of course for cooking pasta or gnocchi dishes as well.
