Characteristic Valle d’Aosta Fontina. Used in the recipes for fondues from this area. It is made with milk from indigenous, black and brown patched cows of the alpine pasture. Compact, yellow paste with oval pinholes or larger holes. Made from full fat raw cow’s milk, matured for at least 3 months.
