Cheese from goat's milk made with vegetable rennet. Caprino, the result of a particular processing, best enjoyed fresh. The delicate rind is made edible by the mantle of selected noble molds that cover it. Limited production, available in limited quantities and seasonally only. Suitable for vegetarians.
