A semi-soft cheese with a grey speckled granite-hued russet rind, from the Auvergne region of central France. The pate is soft and golden with remarkably nutty and earthy notes, and with a touch of salt and other spicy aromas. The flavour reflects the terrior of Auvergne with its rich volcanic soil and the excellent grazing conditions.
