Roquefort Fermier Carles is made according to the original way - actually, an accident - Roquefort cheese was invented. Instead of injecting the cheese with penicillin bacteria in order to help the cheese ripen, in this case penicillum roqueforti are cultured from rye loaves baked in house, letting nature do its course as long as it pleases.
Roquefort Fermier Carles is not only more flavourful, intense and deep than its less artisanal siblings, its structure is also different: more crumbly with more substantial chunks. Highly recommended to add to the seasonal cheese board.
