A specialty from Normandy, made from raw cow's milk with washed rind. During the maturation process cheesemakers rub it with dry salt before washing and brushing it, which allows its beautiful ocher-colored rind to form. Carries tasting notes of hay.

Sadly there are only five dairy farmers left who produce this famous square-shaped cheese.
