A soft goats milk cheese with natural rind, made from raw milk in the Périgord-Limousin region. In the early phase of the maturation, freshly ground smoked pepper was added to the paste which makes this cheese develop an unmistakable and yet subtle and not overpowering smoky-peppery flavour. Wonderful with fruity crackers and sweeter bread. We recommend leaving it at room temperature before serving.
