Under a natural ashy rind, expect a chalky core and a creamy unctuous layer immediately under the rind. When fresh, these cheeses have a zesty fresh lactic flavour. Given a week or two, they develop some classic French funk and the chalky centre breaks down into the inner rind to leave the whole thing a delicious paste!
