With its tender texture, Cocagne comes from the Albigensian region.

A traditional cheese, its slightly whitish rind houses some nobile cheese cultures that transforms part of the paste into a buttery cream, to enchant the palate with notes of hay, typical of sheep's milk. Works best with dry white wines.
