Raw goat's milk cheese from the French Pyrenees, made in a village in the Aspe Valley.
Somewhat similar to Ossay in terms of production method, but made with goat's milk.
An uncooked pressed cheese, it has a great ageing potential.
Herds graze freely in the mountains as soon as the snow melts. Given the fortunate fact that the goats spend virtually all of their time grazing in the hill, their diet is fully natural. As a result, Aydius has a floral and complex flavour, with subtle savoury notes, even more so as it matures.
Its producer, Thomas, whose parents left Dunkirk in the 1980s to devote themselves to their passion of farming. Thomas now has a herd of 230 Alpine goats.
Aydius is distinguished by its firm and consistent texture.
Especially nice with a glass of champagne.
