Raw goat's milk cheese from the French Pyrenees. Somewhat similar to Ossay in terms of production method, but with goat's milk. Given the fortunate fact that the goats spend virtually all of their time grazing in the hill, their natural diet is fully natural. As a result floral and complex, with subtle savoury notes, even more so as it matures.
