The colder weather always brings the season's first Vacherin Mont d'Or from France. Well, or so it used to be. This year French raw milk cheeses are prohibited, therefore we searched high and low for a suitable alternative. Ét voila! Made on the other side of the border, this is the Swiss version of the gooey deliciousness.
Rich, milky floral flavour with spruce bark resin coming through. Texture of thick double cream.
The classic way to devour it is to scarf the rind in an x shape, wrap it in tin foil, add a few rosemary stems, some freshly ground pepper or white wine - all up to one's personal preference. Bake in the oven until all bubbly-melty, and dunk some baby potatoes or baguette chunks in it. Always, we repeat, always have some cornichons on the side.
The Swiss think it's too delicious to cook... If you wish, have it raw: bring it up to room temperature and eat it straight out of the box. And repeat.
