CH Tete de Moine XAV *200g*

The prettiest little cheese "butterflies" but their story is also one of the most interesting cheese stories. About 800 years ago monks in the Swiss Jura mountains created cylindrical cheeses, in the shape of the monks' heads. To make it even more realistic, they came up with a special curler gadget which carved thin shavings from the cylinder, mimicking the shaving of the monks' hair.

The cheese has strong yet very pleasant fruity notes. 

No monks are involved but we always shave the curls freshly for order on the dedicated carver.  

Made from unpasteurised cow's milk.
