A rouge-mould cow's milk cheese. Looks somewhat unassuming, but it is a creamy, buttery, full-bodied cheese with a gooey core. Not pungent but still full of flavour. Perfect to eat just like it is but may be worth a try warm, fresh out of the oven or the grill with honey and coarse black pepper!
