Also known as the "blue brain cheese", blue mould grew on top of this fresh cow's milk cheese resulting in the creation of the ‘blue brain’. The character of the blue brain varies with its maturation: when young it is creamy with slight roasted notes, melting on the palate. Then it develops bluish hues and more prominent flavours. The blue brain-like tone may develop a darker or a lighter blue, and each of them looks different!
