Tosazu Smoked Bonito Vinegar 360ml
Tosazu means "vinegar from Tosa". Originating in Shikoku, the region of Tosa, the original region of Kochi, was known for its excellent bonito. This is why tosazu vinegar is made mainly from dashi, the Japanese broth made of bonito and kombu seaweed. Tosazu also contains soy sauce and mirin. This vinegar is pleasantly sweet, and characteristically has strong smoked notes.
Experiment with it to prepare meat based dishes such as stir-fried chicken or eggplants, as well as as a base for salad dressings, or to marinate vegetables.
