Traditionally, roasting is used in making beer, coffee or cocoa to modify the smell, taste and colour. This hand-roasted black Malabar peppers release strong fruity notes of smoked wood. It is powerfully spicy with tannic and almost sweet notes. Once roasted, its organoleptic properties are truly outstanding!

Serve freshly ground or cracked.

Ideal with grilled caramelized meat. Enhances barbecued fish, pan-fried foie gras, red wine sauce, braised beef or turbot roasted in veal stock. You can even add some to a chocolate desserts.
