Madagascar black pepper, botanically known as Piper nigrum, requires a tropical climate with high temperatures and humidity as well as an alternation of shade and light, to develop properly. Careful post-harvest handling will give the pepper its final colour and flavours.
Some of its use suggestions include grinding it freshly over a plate of beef carpaccio; adding a hint of it to fresh berry salads along with freshly squeezed lime or lemon juice. Also excellent in sweet and sour sauces.
