Gochugaru is a South-Korean chilli. Essential to the country's gastronomy, it is notably used in the recipe for their famous kimchi. Its moderate spiciness, slightly smoky aroma, and beautiful red hue make it a perfect ally not just for kimchi, but also for any pickles, vegetable stir-fries or barbecue sauces. It has a spiciness of about 2000 SHU, slightly stronger than Espelette chilli but still pleasant.
