                        Originally from Galicia, Tarta de Santiago (or St James Cake) is a large, dense, naturally gluten-free, crumbly almond cake. Produced in Galicia by a family bakery since 1914. This cake measures 27cm in diameter and 2cm in height, and serves 6-8 slices.
Ingredients: ALMOND, sugar, pasteurised liquid EGGS, margarine (coconut fat, sunflower oil, water, salt, mono & diglycerides of fatty acids, citric acid, aroma), cornstarch, cornmeal, dextrose, salt, xanthan gum, bicarbonate of soda, sorbic acid, bamboo fibre, sorbitol & glycerine. 
Icing sugar topping: icing sugar, silicon dioxide, tocopherol-rich extract.
