Egg pastas usually come in flat and narrow shapes. This is due to the fact that with a high egg-to-wheat ratio, it is rather difficult to shape the pasta any other way. Rustichella now cracked this code and introduced this egg pasta in a short, cylindrical shape. Well, once at it, they even increased the egg ratio to 30% which makes the cooked pasta beautifully flexible and delicious.
 
But the innovation doesn't end here. They also made this paste with a rough, jagged surface so that it locks pieces of the ragu more efficiently.
 
Try it with seafood-based sauces or some quick-roasted zucchini. They also go very well with traditional sauces such as "alla Bolognese", "alla Salsiccia", "alle Olives" and "Tomato and Basil".
