Rice vinegar is the most common vinegar in Japan and is used in many dishes. This organic pure rice vinegar is made of organic "Akitakomachi" rice, using a 80 years old process (their junmai sake is matured in a fermentation room for 4 and-half months), and of pure mountain water from the Northern part of the Hiroshima Prefecture.

This artisanal and organic vinegar can be used to marinate fish such as mackerel in particular. It can also replace cider vinegar for daily use.

This vinegar was made without any additives, colourings or flavourings.
