Clair and her team use citrus in the recipe, so you get a nice burst of citrus flavour, then the zing of ginger and finally just the gentlest tingle of chilli right at the back of your mouth. It has a mellow taste which works perfectly with food or as a mixer. A refreshing, delicious ginger beer with a subtle kick of chilli right at the end. It is not over-sweet with a good balance of flavours.
