An artisanal vinaigrette dressing from the Hokuriku region of Japan, made by mixing soy sauce with 40% of grated daikon - a variety of flavourful Japanese radish -, and some green shiso leaves. Grated daikon adds a juicy texture and a refreshing flavour to this oil-free, easy to use sauce, while shiso leaves bring a bit of an added depth, with the roundness and umami of soy sauce.
Lovely with any raw or cooked leafy greens, as well as a dip.
