The result is a thick paste used for sauces and spreads, pickling vegetables or meats, and mixing with dashi soup stock to serve as miso soup.

Also known as Shiro Miso, white miso has beed fermented for a shorter time and contains less salt than other miso. Its color can get darker with time, but this is a natural process and it doesn’t have any effect on the taste. Its flavour is sweet, slightly salty and rich in umami.

Apart from miso soups, it may also be used in sauces, marinades, in mashed potatoes instead of milk or in soups instead of cream.
