Salicornaise is a mayo condiment but with all the goodness of the sea... Salicorn (or samphire) is picked by hand with the lowest possible intervention near their workshop in Touquet. Maison Perard's salicornaise is delicious with seafood and fish dishes, even elevating a humble fish & chips. But beyond fish, it is lovely with any grilled meat and vegetables.

 

Since 1964 Maison Perard have been salvaging fish and salicornia from their local port at Boulogne-Sur-Mer, on the picturesque Côte d'Opale.The founder, initially only serving the dishes based on his own recipes in his own restaurant, was soon facing a growing demand from the locals, to bottle up his delicacies so that customers can also enjoy them in the comfort of their own home. Still very much artisanal, still a family business, Maison Perard's range of soups, veloutés and other delicacies are now more widely available for the ever growing base of their devotees.
