With a very high smoke point (over 220 Celsius) grape seed oil doesn't quite burn, and with its neutral taste is a versatile addition to cooking oils. Thanks to its nutty flavour it works well in vinaigrettes with any type of vinegar, never overwhelming the other ingredients. Grape seed oil is an excellent substitute for butter or canola oil.
