According to the principles of traditional confectionery, calisson cream is made directly from candied almonds (not paste!), melon and orange peel, with an impressive 36% almond and 30% fruit content. The mixture is then blended to obtain the creamy texture that easily spreads onto toast, brioche, pancakes or yogurt. Le Roy René's special recommendation? Add it to rice puddings for an incredible depth of flavour and creamy texture.
