Calissons are a Provençal speciality made of almonds, melon puree and candied fruit, with egg whites, over a thin layer of wafer. Le Petit Duc swears by the square shape which ensures that the calissons are consistently soft throughout. 

Pistachio calissons are made with chopped pistachios, and create a well-balanced, delicious harmony of almonds, pistachios and candied fruits.

Calissons are made according to a traditional recipe dating back to the 17th century. Le Petit Duc follows the same principle since the very beginning: each calisson is prepared with care, using only the finest ingredients. The almonds are finely ground into a smooth, creamy paste, which is then mixed with sugar and candied fruit. The delicate, melt-in-the-mouth texture of calissons, combined with the sweet and fragrant fruity-nutty flavours, makes them a real delight, and each bite transports you to the sunny landscapes of Provence.
