Growing on the stump of Asian oak-tree called «shii», Japanese shiitake can not be compared to shiitakes grown in Europe. Its aroma is deep and woody, very rich in umami.

Mainly used in Japan to prepare «dashi» stock, however equally excellent to prepare omelettes, soups or as a side dish with poultry and meat.

Rehydrate for 3 hours in cold water before cooking. Do not forget to use the water as a cooking stock afterwards.
