A dry white made from organic Vermentino and Clairette grapes, harvested strictly by hand.

After maceration, pressing is carried out completely in the absence of air. The juices are left to settle for 24 to 48 hours. After settling and re-incorporation of the filtered muds, the juices are stored in the cold for 4 to 5 days before starting the fermentation. Once the fermentation is complete, the wines are racked and put in French barrels. 

Beautiful pale gold color. Elegant nose mixing smoky notes of vanilla, floral and white fruit. The mouth is full and long, with a nice balance. The buttery finish is on candied fruit and quince paste.

Pairs very well white meats and fish, it will also nicely accompany cooked pasta cheeses, foie gras and desserts.
