Matured in a wooden box, this is an unpasteurized cow's milk cheese with a crunchy texture and earthy as well as peppery notes. To appreciate Pavé Toulousain, it is best to cut it in thin slices and eat the crust at the end, after tasting the heart. Even better with some nuts or a slice of rye bread, along with some light red wine. Sold by weight.
