A raw goat's milk cheese with ashy rind. First made in the 18th century if not even sooner in the Basse-Sologne region, with protected origin since 1970.  One to be enjoyed at all stages of ripening, but nothing beats a cheese that has evolved in the cellar's secrecy, taking its time. Its core will then be firm, sometimes even brittle with time, of a deep ivory white. Its tasting notes are intense with woody, nutty accents. Its acidity, which disappears during maturing, has given way to a secret freshness.
