Zampone is an Italian sausage specialty, made from pig's trotters, stuffed with minced pork shoulder. It is an essential dish during the festive season in Italy, both around Christmas and New Year's. 
 
Legend has it, Zampone and Cotechino products originate from the Modena area from the 16th century, the time of the invasion of the troops of Pope Julius II. In order to prevent pigs being confiscated by the troops, locals slaughtered the livestock and stuffed the minced meat in the rind, creating Cotechino, and then in the skin of the forelegs, making Zampone.

Zampone is made from selected parts of the pork (most commonly the shoulder), with very specific flavouring, typically with pepper, nutmeg, cinnamon, cloves and sometimes wine. The meat is then stuffed into a natural casing, the skin of the foreleg of the pig, tied at the top. Zampone is characterised by its distinct, mouth-watering flavouring. 

It is easy to prepare, simply boil it for 20 minutes, and enjoy it freshly cooked. This is a large, 1kg bung, made from scratch by Macelleria Falorni in Tuscany.
