Cotechino is an Italian sausage specialty, made of noble parts of the pork, and its rind: the meat is minced and flavored with herbs and spices, then stuffed into a piece of bowel. It is an essential dish during the festive season in Italy, both around Christmas and New Year's. It is somewhat softer than Zampone, but both is characterised by its distinct, mouth-watering flavouring. 
 
Legend has it, Zampone and Cotechino products originate from the Modena area from the 16th century, the time of the invasion of the troops of Pope Julius II. In order to prevent pigs being confiscated by the troops, locals slaughtered the livestock and stuffed the minced meat in the rind, creating Cotechino, and then in the skin of the forelegs, making Zampone.
 
It is easy to prepare, simply boil it for 20 minutes, and enjoy it freshly cooked. Made from scratch by Macelleria Falorni in Tuscany.
