Christophe Adam founded L'Eclair de Génie by trading in the Michelin-starred kitchens of the Crillon and then at Fauchon, where he fell in love with making mind-blowingly exciting éclairs. In 2012, he launched L'Éclair de Génie, a concept entirely dedicated to éclairs, his signature pastry.

A genius creator, he went further and launched his own range of chocolates in 2019. A range of bars, richly filled with thick layers of his own artisanal praline creations.


Author of several books in which he revisits the classics of French pastry in a contemporary way, Christophe Adam was named "Best Pastry Chef of the Year" in 2014, and elected "Best Pastry Chef 2015" by Relais Desserts.
