A rich dark chocolate bar with a minimum of 57.9% cocoa content, filled with a thick, soft caramel filling.

The filling is a house-made salted butter caramel cream, enriched with toasted buckwheat. The salted butter caramel is made with added creme fraiche to further enhance the notes of caramel and buckwheat.

The filling ratio of the bar is min. 25%.

Christophe Adam founded L'Eclair de Génie by trading in the Michelin-starred kitchens of the Crillon and then at Fauchon, where he fell in love with making mind-blowingly exciting éclairs. In 2012, he launched L'Éclair de Génie, a concept entirely dedicated to éclairs, his signature pastry.

A genius creator, he went further and launched his own range of chocolates in 2019. A range of bars, richly filled with thick layers of his own artisanal praline creations.

Author of several books in which he revisits the classics of French pastry in a contemporary way, Christophe Adam was named "Best Pastry Chef of the Year" in 2014, and elected "Best Pastry Chef 2015" by Relais Desserts.
