A rich dark chocolate bar with a minimum of 57.9% cocoa content, with a thick pistachio praline filling. Part of l'Eclair de Genie Iranian Pistachio range. They take pride in not mixing pistachios from different origins, but only using the most flavourful variety. The filling is a house-made pistachio praline made from roasted Iranian pistachios, both in a creamy as well as in a crunchy chopped format, with a hint of Guerande fleur de sel.

The filling ratio of the bar is min. 47.4% of which 20.9% is a pure pistachio paste!

Ingredients: Dark chocolate 52.6% with a min 57.9% cocoa content (cocoa paste, sugar, cocoa butter, SOY lecithin, natural vanilla flavouring), Iranian PISTACHIO paste 20.9%, MILK chocolate with a min 35.2% cocoa content (sugar, cocoa paste, cocoa butter, whole MILK powder, SOY lecithin, natural vanilla flavouring), cocoa butter, chopped Iranian PISTACHIOS, Guérande fleur de sel sea salt flowers.

Christophe Adam founded L'Eclair de Génie by trading in the Michelin-starred kitchens of the Crillon and then at Fauchon, where he fell in love with making mind-blowingly exciting éclairs. In 2012, he launched L'Éclair de Génie, a concept entirely dedicated to éclairs, his signature pastry.

A genius creator, he went further and launched his own range of chocolates in 2019. A range of bars, richly filled with thick layers of his own artisanal praline creations.

Author of several books in which he revisits the classics of French pastry in a contemporary way, Christophe Adam was named "Best Pastry Chef of the Year" in 2014, and elected "Best Pastry Chef 2015" by Relais Desserts.
