Calvi Sant’Andrea Riviera Ligure DOP Organic Extra Virgin Olive Oil 500ml
Sant'Andrea Riviera Ligure DOP Organic Extra Virgin Olive Oil – cold pressed olive oil made exclusively from organic Taggiasca olives grown and harvested at our Calvi's farm in Liguria. Taggiasca olive oils are typically fragrant and light, making them ideal for those who prefer less intense flavours.
Their trees are fertilised in late winter exclusively with organic fertilisers and protected from olive fruit flies with natural pheromone and kaolin traps. The olive groves are also naturally grassed and mowed in late spring (they do not use any herbicides). They also avoid tilling the soil to maintain its natural biome.
The olives are harvested from late October to mid-December, placed in crates, and immediately taken to Calvi's mill. They then use a water-cooled mill (to avoid overheating the olive paste during pressing), a temperature-controlled malaxation, and a two-phase extraction in order to retain as many of the olive's polyphenols as possible in the oil.
The resulting product is delicate yet flavourful, ideal for seasoning the finest dishes, particularly fish carpaccio, steamed shellfish, bresaola with rocket and parmesan, and as a condiment for fresh pasta paired with parmesan cheese.
Calvi hand-wraps each bottle with embossed aluminium foil for complete protection from light: this measure—combined with the higher polyphenol content—allows the oil to maintain its original aromas over time.
