Calvi Pesto without garlic is prepared exactly like the classic recipe, omitting the garlic. Using genuine Genovese Basil (Basilico Genovese DOP), pine nuts, Parmigiano Reggiano PDO and Pecorino Romano PDO. It contains the best Ligurian ingredients, and has a high percentage of pine nuts (24% – the same quantity as basil)!) which gives the pesto a unique sweetness. The prized Genovese basil gives the sauce a rich green colour. It is made with pine nuts only, without cashews or any other nuts.
 
Excellent on pasta, such as trofie, either plain or with green vegetables, such as courgettes or green beans, for making lasagna, mixed with cooked tomatoes for a delicious pasta sauce, or added to minestrone soup just before serving. Although most commonly used with pasta, pesto can be much more than merely a pasta topping. Try it as a sandwich filling with some Italian meat or grilled vegetables.
