Creamy texture with a beautiful orange colour, pleasantly spicy notes and a touch of garlic and fish. Rouille sauce goes wonderfully with fish soups. It can also be served as an accompaniment to all white fish cooked in court-bouillon. For an aperitif, it can be enjoyed on toast, alone or garnished with cooked vegetables.
