A Basque specialty, at first surprising, maybe even shocking because garnishing whole sardines with pieces of Bayonne ham may sound somewhat odd. But we promise it works... So much so that this recipe of La Belle Iloise has now built a considerable fan base in the UK too. We all agree that sardines, tomato, sweet AOP Espelette chilli and of course Bayonne ham are excellent together. Try it both cold and warm, the flavours seem to adjust to the different temperatures nicely. We suggest enjoying it with a piece of buttered sourdough.
