Short-grain rice is the most common type of rice in Spain. Also known as paella rice, this type of short and rounded rice is especially selected from varieties such as Bahia and Senia which originate in Valencia. This type of grain has the characteristic of absorbing more than other types of rice, the flavours of the stock in which it is cooked, making it the ideal type of rice for cooking the perfect paella. This allows you to save the starch, so it always comes loose, without caking, making it perfect for paella or risotto style dishes.
