Bean to bar chocolate made locally by our friend Anisa. This bar started out as a handful of organic Criollio cocoa beans from the foothills of the Andes Mountains and the lush forests of the Peruvian Amazon. The beans make their way to the U.K. where I roast, winnow, stone-grind, temper and mould them in a process taking more than 72 hours. The result is a fantastic, dark bar of chocolate with notes of berries and raisin.
