The biggest and today the rarest type of sturgeon. The yearly catch hardly exceeds 100. Even though the roe content may reach 25% of the fish’s body, the female will be mature only by the age of 20-30. Beluga gives the most delicious and the most expensive caviar in the world. Caviar, of course, is not made, it is a wonderful gift of nature. Sturgeons are caught and roe is collected by cutting their belly – some say alive, because roe may be bitter afterward. Roe is thoroughly washed and dried. The salt is added, this is important for the preservation and the creation of the caviar’s texture.
